DIY Cake Mix, 3 Ways

I don’t have anything against a box of cake mix.

I may not like the fact that there are ingredients I can’t pronounce listed on the box, but if I took a stand against that, I’d have to return half of my shopping cart on any given grocery day.

Let’s face it, unless we live completely off the land, convenience comes at a price.

Last week, I spent some of my spare time topping up what I call my “homemade pantry”. Over the years I’ve learned a few tricks for making things, quickly and affordably at home, so once in a while I need to take day and replenish. Sometimes it’s to save money, but mostly these things save me time, and that’s worth more to me than gold.

That might mean that I take a trip to Bulk Barn, to stock up my jars of spices and my homemade spice blends. It might mean whisking together my gluten free all purpose flour blend that I make myself, or that I take 5 minutes to combine molasses and white sugar, making a large container of my own dark brown sugar.

And sometimes, I make some cake mix. Truthfully, this is usually packed into a jar and given as a gift to someone, but then I discovered the whole “Cake in a Mug” thing.

Unfortunately, it also involves a microwave, and if THAT’s not your thing… well, you’ve still got cake mix.

DIY Cake Mix, 3 Waysimg_6434

Vanilla Cake Mix
(Preparations Instructions)

  • 1 litre Mason Jar
  • 2 cups All-purpose flour
  • 1/2 cups of white sugar
  • 2.5 teaspoons of baking powder
  • 1 teaspoon of salt
  • 1 teaspoon vanilla powder (optional)

Chocolate Cake Mix
(Preparations Instructions)

  • 1 litre Mason Jar
  • 1.5 cups All-purpose flour
  • 3/4 cups + 2 tbsp of white sugar
  • 1/2 cup + 1 tbsp cocoa powder
  • 3/4 teaspoons of baking soda
  • 1/2 teaspoons of baking powder
  • 3/4 teaspoon of salt

GLUTEN FREE Chocolate Cake Mix
(Preparations Instructions)

  • 1 litre Mason Jar
  • 1 cup Brown Rice Flour
  • 5 tbsp Potato Starch
  • 3 tbsp Tapioca Starch
  • 3/4 tsp Xanthan Gum
  • 3/4 cups + 2 tbsp of white sugar
  • 1/2 cup + 1 tbsp cocoa powder
  • 3/4 teaspoons of baking soda
  • 1/2 teaspoons of baking powder
  • 3/4 teaspoon of salt
  • 1/4 cup semi-sweet chocolate chips

Place all of your ingredients into a very large bowl (to whisk by hand) or in a stand mixer with the whisk attachment. The goal is to thoroughly mix your ingredients, so that you have a consistent baking experience, every time. Don’t just mix it, whisk it for about 3 minutes. * Please make sure your jars, bowls, whisks, spoons and anything else that comes in contact with your mix, is perfectly dry! The smallest amount of moisture will trigger fermentation and will significantly reduce the shelf life of your mix, or make you sick.
