GF Meat-Filled Dumplings (For Soup)

Yes, I know this is pretty much Wonton Soup, but it’s not authentic enough for me try and sell it that way, so instead we’re going to call them Meat-filled dumplings :). They’re easy enough if you’ve tried making my GF Wontons wrappers before or have some of the dough already prepped and in the fridge. My daughter actually preferred them cooked in the soup but served without broth, myself I liked the whole package :).dumplingscollage

Meat Filled Dumplings

  • GF Wonton dough
  • 2 Hot Italian Sausages with the meat removed from the casings
  • 1/2 cup finely chopped onion
  • 1/2 cup finely diced celery
  • 1/4 cup grated carrots
  • 1/4 cup water
  • 1/4 cup gluten free, quick cooking oats
  • egg-wash
  • Chicken broth of your choice
  • Sliced green onions

wontons2Saute your onions, celery and carrots in a bit of olive oil until softened. Add in the ground sausage meat and a bit of salt and pepper, remembering that the sausage meat will have its own salt and spice already. Fry the mixture together until the meat starts to brown and then add the water to get all the flavors from the bottom of the pan. Continue cooking on medium heat until cooked through, then stir in the oats and remove from heat. The oats will soak up the juices so you don’t lose any of that flavor, and will add a bit more binding substance to your filling.

Roll out your wonton dough and cut into squares, roughly the same size of a wonton wrapper. Moisten the edges with egg wash and spoon the filling into the center, then fold the corners into the center, press and seal.

I used a good quality chicken stock with some sliced green onion and black pepper in the broth. Bring it to a boil and drop the dumplings in – give them a few minutes to cook through and soften, soft dumplings are my favorite :).

There’s something about spicy sausage dumplings in a rich chicken broth that makes you feel warm and cozy. You also don’t miss any of that wheat or dairy and will probably go back for seconds.
